When I was growing up, no holiday meal was complete without ambrosia. A sweet side or fruit salad, ambrosia is a cool textural treat that readily compliments poultry and ham dishes. And while, admittedly, the ingredients are a tad “old-school,” ambrosia will always appear at my house around the holidays to lend a taste of home.
Ambrosia
1½ pounds pineapple chunks (fresh or canned)
2 pounds mandarin oranges (fresh or canned, though canned works best here)
½ pint sour cream
1 medium package coconut
2 cups pecans (optional)
2 packages miniature marshmallows
Drain pineapple and oranges, if using canned, and chip up into small bits. Combine the remaining ingredients and toss lightly. Allow to chill overnight if possible. Serves 20.
