- 2 cups all-purpose flour
1/3 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 stick of butter, cut into 8 tablespoons, frozen
1/2 cup raisins
1/2 cup sour cream
1 large egg
1 1/2 tsp cinnamon
Preheat oven to 400 degrees
Place sugar, baking powder, baking soda, cinnamon, and salt in food processor. Mix. Add butter, mix until combined (mixture should resemble coarse meal). Add sour cream, egg, and 1/4 cup raisins. Mix until you see dough pull away from the sides. Add the remainder of the raisins, and pulse several times, just to combine.
Place on a lightly floured surface and pat to about 3/4-inch thick. Use a sharp knife to cut into triangles; or a circular cookie cutter, or the rim of a drinking glass to cut out scones. Place on a cookie sheet, about one-inch apart. Bake until golden, about 15 to 17 minutes. Cool for five minutes and serve warm or at room temperature. Best served with Devonshire cream and jam.
- 1 cup heavy cream
1/2 cup marscapone
1 TBS sugar
1 tsp vanilla extract
Combine all ingredients in medium chilled bowl. Mix, with an electric mixer, until peaks form. Serve with scones.
