Celiac Awareness Month recipe: Great-tasting, gluten-free

In recognition of the fact that May is celiac awareness month, we will be posting  a gluten-free recipe each week. First up: A basic, easy-to-make bread that can be served as an accompaniment to soup or a salad, or sliced up and filled with your favorite sandwich fixin’s.

Rice bread
Ingredients
2 cups rice flour
1 cup millet flour
2 teaspoons dry yeast
2 cups warm water
2 teaspoons salt
Directions
In a large bowl mix flour and salt, then add yeast and water. Mix thoroughly and cover. Allow to rise for at least an hour. Punch down and knead dough, adding more flour, if necessary. Let dough rise for one hour more.    Preheat oven to 400 degrees. Transfer the dough in a loaf tin and bake for half an hour or until golden brown.
